I bought a jumping saddle for Amber recently. I was assured it fit fine and it had taken me ages to find one that fitted both me and her so I went for it. I never liked it much - the leather felt quite hard. Amber was ok initially but over a few weeks she became more and more difficult to ride. Tense, bucking, over-jumping, rushing. I was wondering what on earth was going on blaming everything from restricted turn out to new haylage, to ulcers, to physical issues to coming into season to me forgetting how to ride. I was in despair at how hard I was finding her when I ditched the saddle and borrowed one and she was instantly transformed. Physio confirmed no issues physically. I have now managed to find another saddle and she is going so well. Totally relaxed and willing. A different horse really. So I guess even if a saddle 'fits' a horse still might hate it! Like shoes I suppose. Some just aren't comfy even if they are the right size.
