Bitting advice - needle in haystack

Hi all, we have a big strong 16hh gelding who is a fabulous jumper. My teenage daughter rides him nicely but is struggling with his enthusiasm at competitions. He loves his job and he will ignore her attempts at bringing him back and gets faster and faster. The best we have found is a NS Waterford gag, which he started by respecting but now tends to ride through it. We have tried a snaffle, NS elevator, NS universal, rubber pelham (didnt like a metal curb). He arrived in a tom thumb but I didnt like the way he went in it. He is in a flash with the waterford when jumping and a grackle and snaffle for flat work (and then fine). It's the SJ that gets him fired up. Any thoughts or ideas? Thank you in advance.
